Philippe Chatillon, artisan winemaker, was the manager of the Domaine de la Pinte in Arbois (39, Jura) for 18 years. When he returned to the Jura in January 2013, he decided to create his own estate. He finds in Passenans in Côtes du Jura, on a sunny hill, a vineyard of Savagnin. Then, next to it, Red-tailed Melon and Gamay. Further on, on a more chalky soil, he buys old Pinots Noir and Chardonnay. The adventure begins with these 2 hectares. The harvest is entirely manual. The grapes are collected in compost (boxes) and arrive whole in the cellar, which prevents oxidation. In the vineyard and in the cellar, no weedkiller or synthetic chemicals are used. Only the pickaxe caresses the vine. Philippe works with products from nature: horn dung, compost tea which ferments for 24 hours. It consists of a mixture of algae and fungi which will then be spread on the ground. In the cellar, the grapes are accompanied to express their fruit and their terroir. It is aged in barrels in an old 17th century cellar. In 2017, the estate acquired an 18th century cellar, then in 2018 a 19th century cellar completed the heritage. Philippe Chatillon works his wines in bio-harmony. According to him, the vibration of the sound is important because it helps to balance the wines in the cellar. He uses a crystal harp and singing bowls to harmonize the wines. This brings an energy, the search for harmony. There is no filtration or fining, he bottles the wine by gravity. The wines of Domaine Philippe Chatillon are labeled Bio Ecocert and Vin Nature.
