FORESTIERI The Forestieri are two young winemakers, Dario who came from Pisa and Ezequiel, a native of Argentina, who cross their paths in Roccatederighi, in the Upper Maremma. They have in common the dream of being able to produce their own wine. A bit like an artist who tries to give his style to a canvas, they feel the need to express themselves through wine. The idea was born when Ezequiel began to recover some old plots of 70/80 years around Sassofortino and Roccatederighi thanks to word of mouth among the elderly in the area, intent on abandoning or eradicating some of these viticultural heritage. Meanwhile Ezequiel meets Dario, with whom he immediately shares the love for the old vineyards, the idea of agriculture in harmony with the rhythms of nature and wines that reflect this territory. It all starts almost for fun, for passion ... but soon the game becomes about 7 hectares THE TERRITORY We are in the Upper Maremma, a high hill area included in the Colline Metallifere Park, an area protected by Unesco. It is a geologically very varied area, soils that constantly change matrix passing from volcanic rocks (Rioliti, Basalt) to sandstone, marl, granite and marl. Having many small plots scattered in this territory allows you to have a very wide expressive palette of the varieties present. The vineyards are located from 200 meters up to almost 600 meters above sea level. Always inserted in a wooded setting, passing from the Mediterranean scrub in the lower part with Corbezzoli, Sughere, Mirto to the high areas where we find Castagni, Cerri and Querce. As per tradition, they are plots with mixed varieties with red and white skin, coplantate, which share the same row: Sangiovese gives way to Trebbiano, Malvasia Bianca Toscana, Ciliegiolo, Malvasia Nera, Alicante Nero, Moscato and other rare native varieties. biodiversity reigns supreme, the vines are combined with the olive and fruit trees. Our intent was right from the start to respect the place that welcomes us through healthy agriculture, trying to follow the natural rhythms through the use of biodynamic and green manure preparations. The fixed thought is to save these "GARDENS" that risk to be lost together with a historical and cultural heritage linked to the traditions of this corner of Maremma. This is what drives us every day. IN THE VINEYARD Our parcels are completely different from the point of view of the geological matrix and the position, we go from vineyards at 600 meters above sea level to 100 meters above sea level, so they are each treated as an identity in its own right. In pruning, we respect the plant as much as possible, avoiding cuts on the "old" wood, favoring the shape of the plant and its "inclination" trying to preserve the lymphatic channels. in short, its pruning, passing from the Guyot, to the spurred cordon, to the sapling. We do not use synthetic mineral fertilizers, but we make use of mixed green manures, which we sow by hand and bury with the passage of the tractor: in this way we keep the soil between the rows grassed with various essences that, depending on the vintage, we roll on the ground as a mulch layer or for mulch. We use biodynamic preparations and compost heaps to raise and restore vitality and interconnections at the soil level between microorganisms, micro and mesofauna. At the level of phytosanitary treatments we only use: Copper and Sulfur with different formulations and shapes, some vines due to the inaccessibility with the tractor are treated by hand with a backpack sprayer. The spring work is all manual: selection of the shoots, suckling and "hoarding" of the uncapped shoot. The harvest is done manually in crates. IN THE BASEMENT We vinify the fruits of our vineyards, without the use of selected yeasts and other additives. We do not add sulfur dioxide during fermentation, but the additions are made pre-bottling up to a maximum of 30 mg / l of tot. We "clarify" our wines with the natural cold of the outside of our cellar and decanting the wines at the right time.
