The Denis Montanar winery is located in Borgo Dodone, in the small town of Villa Vicentina, in the province of Udine. The family has been dedicated to the life of the fields since 1904, growing grapes, corn plants of the ancient Dente di Cavallo variety, spelled, wheat, soy, with an eco-sustainable approach and great respect for the environment and the territory, to the point that since 1996 he has decided to adopt agriculture biological and to adhere to the territorial protocol of the “Renaissance du Terroir”. It is 1995 when Denis Montanar and the Borc Dodon project are officially born. Denis Montanar mainly cultivates native vines in the plain of Aquileia, on the banks western part of the Isonzo river, in the part closest to the mouth. The grapes produced are: Tocai Friulano, Verduzzo Friulano, Sauvignon, Pinot Bianco, Merlot, Refosco dal Peduncolo Rosso and Cabernet Franc. All the vines derive from mass selections carried out in ancient local vineyards. The soil is sandy, composed of a mixture of silt and clay, which gives the wine a typical fresh and mineral note. In order not to alter the naturalness and purity of the fruit, in the vineyard any treatment with chemical compounds or synthetic substances is banned. Also in the cellar the modus operandi is the same, the vinifications take place spontaneously for work of indigenous yeasts with more or less prolonged macerations in open wooden vats or fiberglass. Refinement can take place in steel or concrete tanks for the longer versions young and carefree or in wooden barrels for the most intense and structured interpretations for round off all the edges of the wine. None are practiced before bottling invasive operation such as filtrations or clarifications.
