The company, which currently covers just over 5 hectares, was born in 2008 with the unification of many small particles scattered in the territory of the municipality of Gradoli at an altitude between 350 and 500 meters with south-east exposure; the soil is volcanic. We immediately decided to adopt agronomic and oenological practices that did not alter the naturalness of the final product, in full respect of the environment. Part of our small vineyards dates back to the post-war period, others were planted in 2008 while others are recent, but in all of them only representative varieties of Gradoli can be found, namely the procanico (Tuscan Trebbiano), the red Grechetto (Sangiovese) and the aleatico, for a total of about 3 hectares to which are added 2 hectares of olive grove, part of the wood and arable land. In the vineyard we try to impact the environment as little as possible, we have adopted spontaneous grassing by carrying out a couple of mows during the spring, for fertilization we use company compost or pellet manure. To combat the common pathologies we resort to treatments with copper and sulfur, in low doses and only if necessary, while in favorable seasons we use biological invigorating alternatives with a lower impact. Once ripe, the grapes are harvested manually and taken to the cellar for processing, we use small quantities of sulfur dioxide only on the skins before fermentation begins, the latter starts spontaneously without inoculation of yeasts. After fermentation, the wine is placed in old barriques, it will then be bottled without being filtered.
