Formerly created by the pioneers Alain CASTEX and Ghislaine MAGNIER, it is now Jordi PEREZ (helped by Gael), since 2015, to perpetuate the know-how and philosophy of the field: respect for the land and the laws of life for happiness of those who consume the fruits .. There, 4 hectares in steep hillsides. Not just vineyards. An exceptional land, architecture, geology, madness! All this heritage, these constructions in dry stones, walls, agulles ... Pastoralism, re-introduction of local varieties of olive and almond trees in agroforestry, vegetal cover of soils, vinification without inputs or sulphites ... are the new or old challenges that give the wines of "Casot" their great typicality.
