IN THE VINEYARD
We grow approximately 3 hectares of vineyard in Cupramontana in the Manciano district on two parcels planted in 1970 and 1976 located at 300m above sea level and adjacent to the forest that completes the property. The variety is Verdicchio with some Trebbiano and Malvasia plants.
Certified as an organic company, our commitment is to remain well below the limits prescribed by the rules of organic viticulture. In the vineyard we only use contact products based on mine sulfur and copper, in the period between mid-April and mid-July, to contain powdery mildew and downy mildew; doses and frequency are chosen from time to time by us based on observation of the progress of the season.
The soil of the vineyard, composed of clayey marl and chalk, is never disturbed. We do not use fertilizers of any kind and only in August, at the end of the annual cycle of the wild herbs present in the vineyard, is shredding carried out.
We believe that a balanced vineyard is the best defense against pathogens and the guarantee of healthy plants that produce the best fruit, which is why we do not eradicate anything that spontaneously lives in the vineyard, even that which makes the work more difficult or which would seem to penalize the vines, trying to safeguard their natural biodiversity.
IN THE BASEMENT
We make our wines in total freedom, using only our own grapes, without the help of consultants, keeping in mind the meetings we have had with winemakers who persist in thinking about viticulture in a divergent way.
Our wines are the result of spontaneous fermentations without the addition of sulfur at every stage of winemaking. We do not use any substances permitted for oenological use, we do not practice temperature control. Our tools are a crusher-stemmer, a lever press, a pump and stainless steel tanks.
At the end of the alcoholic fermentation we decant the wine which remains on the fine lees until bottling which takes place without clarification and filtration; any residues on the bottom of the bottle testify to the evolution that the living wine undergoes in the bottle.
The uniqueness of each vintage and our desire to continue experimenting mean that, despite following a common outline, our wines are different every year.

<p style="text-align: justify;">Coltiviamo a Cupramontana in contrada Manciano circa 3 ettari di vigneto su due particelle impiantate nel 1970 e nel 1976 poste a 300m slm e adiacenti al bosco che completa la proprietà. La varietà è il verdicchio con qualche pianta di trebbiano e malvasia.<br />Certificati come azienda biologica, il nostro impegno è di restare ben al di sotto dei limiti prescritti dalle regole della viticoltura biologica. In vigna utilizziamo esclusivamente prodotti di contatto a base di zolfo di miniera e rame, nell'arco temporale compreso tra la metà di aprile e la metà di luglio, per contenere oidio e peronospora; dosi e frequenza sono scelte di volta in volta da noi in base all&rsquo;osservazione dell'andamento della stagione.<br />Il terreno del vigneto, composto da una marna argillosa e gessi, non viene mai smosso. Non utilizziamo concimi di nessun genere e solo in agosto, alla fine del ciclo annuale delle erbe spontanee presenti nel vigneto, viene effettuata la trinciatura.<br />Crediamo che un vigneto in equilibrio sia la miglior difesa da patogeni e la garanzia di piante in salute che diano i frutti migliori, per questo non eradichiamo nulla di quello che spontaneamente vive nel vigneto, anche ciò che rende il lavoro più difficile o che sembrerebbe penalizzare le viti, cercando di salvaguardarne la naturale biodiversità.</p>
<p style="text-align: justify;"><strong>IN CANTINA</strong></p>
<p style="text-align: justify;">Elaboriamo i nostri vini in totale libertà, utilizzando solo uve proprie, senza l'ausilio di consulenti, tenendo a mente gli incontri fatti con vignaioli che si ostinano a pensare la viticoltura in maniera divergente.</p>
<p style="text-align: justify;">I nostri vini sono il risultato di fermentazioni spontanee senza aggiunta di solforosa in ogni fase della vinificazione. Non utilizziamo nessuna sostanza ammessa per uso enologico, non pratichiamo controllo di temperatura. I nostri strumenti sono una pigiadiraspatrice, un torchio a leva, una pompa e serbatoi in acciaio inox.</p>
<p style="text-align: justify;">Al termine della fermentazione alcolica travasiamo il vino che che rimane sulle fecce fini sino all'imbottigliamento che avviene senza chiarificazione e filtrazione ; gli eventuali residui sul fondo della bottiglia testimoniano l'evoluzione che il vino vivo compie in bottiglia.</p>
<p style="text-align: justify;">L&rsquo;unicità di ogni annata e la nostra voglia di continuare a sperimentare fanno si che, pur seguendo un canovaccio comune, i nostri vini siano ogni anno differenti.</p>
