Un D.O. Penedès tout droit sorti du "Sin Project" des viticulteurs Ruiz Masachs (dont la famille élabore du cava depuis 1880) et Bañeres. "Sin" signifie "sans" en espagnol. Vendange manuelle, à la fin du mois d'août. Fermentation naturelle après pressage pneumatique. Le vin est mis en bouteille sans clarification mais avec un léger filtrage, après six mois. Robe or rose. Notes de coing et mirabelle, au nez. Bouche fruitée, minérale et fumée.
