Four hectares of vines dotted around the Slovenian Carso, growing on fossilised limestone. The grapes are manually harvested. 24-48 hours maceration with indigenous yeasts. Non filtered.
Colore carico. Intrigante, secco buona mineralità, note acidità cenni di una rivelazione che si scopre preponderante ad ogni sorseggio. Per niente banale. Buon corpo. Abbinare piatti autentici e selvaggi.
Fresh and mineral, spring flowers. Persistent.
Nel bicchiere è in continua evoluzione e raggiunge vette altissime di piacere sia al naso che al palato.
Viti tra i 7 ed i 25 anni. Diraspatura manuale , macerazione tra le 24 e le 48 ore . Lieviti indigeni , malolattica svolta . 12 mesi in acciaio . Non filtrato . Produzione :1400 bottiglie l’anno
