EVERYTHING WE HAVE ALWAYS WANTED AND WANTED ..... is here .... ——————————————— BALOS 2017 Sparkling Pinot Noir @crocizia “Pet Nat” a wonderful ripe raspberry color with coppery nuances, opaque, turbid, some hint of reduction as soon as it is opened, which then when poured and let it breathe disappear. Yeast, pomegranate, currant, raspberry, strawberry yogurt, nasal sensations return in the mouth + blood orange, kinotto, lemon and grapefruit zest, remarkable freshness and flavor, infinite salivation, bitter bitter finish. Thanks to Crocizia and my friend Francesco Lupi from @winesymphony who serves me a simple, delicious, fresh, satisfying and funkish drink, which mitigates a bit this light-hearted, indifferent, arid, cold and impassive "Running Friday" of mine ..... Everything we want and want is there .... close ..... very, very close .... stuck ..... stuck .... Non mi piace la bolla, a mio gusto la trovo troppo grassa, non grossa eh, grassa, e ciò limita la beva. Bellissimo colore, profuma di frutti rossi molto maturi, piacevole acidità e sapore che rimane a lungo in bocca.

Attrapé à "Bulles au centre" un beau pet nat' à l'italienne gourmand, tendu, aromatique, belle densité, épicé, accompagné d' une viande rouge avec des pâtes enrobées d'une belle sauce, parmesan affiné (des vaches rouges par exemple) ça sera parfait. Ça peut aussi se boulotter tranquille sur sa fraîcheur à l'apéro avec quelques charcuteries... Fermentation sans ajout, 20 jours de macération pas de clarification ou de stabilisant, mis en fut jusqu'au printemps. Pas de filtration et refermentation en bouteille, du pur jus quoi ! Tellement intelligent ce vin qu'on parle italien couramment après avoir éclusé la bouteille. Étonnant non ?
