The harvest of the grapes for the Mons Roni Cannitum of Cantina Giara takes place in September, after a careful selection of the grapes and manual harvesting in boxes.After the harvest, the grapes are destemmed and left to ferment spontaneously with its indigenous yeasts. Maceration and fermentation last 6/9 days without temperature control and with pumping over every day.
