Grappoli raccolti a fine ottobre , fermentano spontaneamente in cemento per circa 1 anno . Seguono 18 mesi di evoluzione sur lie in cemento e 6 mesi in bottiglia prima della commercializzazione . Naso evoluto , con note minerale che rasentano l’idrocarburo . In bocca sentori di marzapane . 11000 bottiglie prodotte all’anno .
