Pale and unfiltered (little or no perlage but the bottle had been opened for a while) Critussy scents, yeast A little sour, nice acidity, refreshing greenery (the unseen perlage can be felt on the tongue)
A nice game between the smell, very close to grape varieties, and the taste really dry and sour. An amazing expression of sur lies from the first organic farm from Valle d'Aosta
