From vineyards at altitude of 700m. Wild-yeast fermentation, extraction of 8 days. Organic farming with biodynamic practices. Low sulfites, unfiltered. Very Strong nose. Medium-bodied wine with soft and discrete tannins. Minerality and ripe fruits like strawberry, dogwood berry and plum. Notes of red pepper, black olive, soil, intense fresh oregano and thyme pleasantly balanced with coconut milk and butter. The 8-month stay in big barrels gives a discreet vanilla aroma. Very long aftertaste, refreshing, herbal and fruity.
