For the 2021 San Vincent Rosato Frizzante Gianluca uses exclusively the variety Sorbara, the most filigree and elegant variant of the Lambruscofamile, which is quite heterogeneous in itself. Sorbara is found mainly in the south of Modena in the lowlands around Carpi, which with its sandy subsoil provides the perfect conditions for this variety. Purely varietal, he vinifies Sorbara exclusively as Rosato to give additional emphasis to the delicacy of the aromas. The name of the wine is a tribute to a winemaker friend in Champagne, whom Gianluca visited just as a festival was being celebrated in early April in honor of St. Vincent, the patron saint of winegrowers. This Rosato is fermented spontaneously in the best natural wine tradition without unnecessary intervention and then aged for a few months in concrete cisterns. As with all wines, secondary fermentation in the bottle is initiated by adding sweet reserve of the same wine and takes place in the bottle. Disgorgement is not carried out. Aromas of cherries, orange zest and rose petals dominate the bouquet - then very vital, crystal clear and dynamic on the palate. In the finish with a lot of pressure but always elegant!
