The Saldalama is a possible entry into Max Brondolo's great sparkling wine worlds, a kind of preparation for his highly individual and delicate frizzante as well as a reference to Castelvetro di Modena, the capital of Modenese Lambrusco production. With the exception of Trebbiano di Spagna, all of its grape varieties are represented in it: Lambrusco di Grasparosso is responsible for power, dark fruit and energy, Lambrusco di Sorbara contributes elegance and acidity, Uva Tosca provides freshness and bright red fruit, the extremely rare Lambrusco Fioranese gives the wine rusticity and backbone and the white Trebbiano Modenese provides bright fruit and delicate floral notes. Max knows how to combine all five and make a harmonious whole out of the multitude of individual parts. He vinifies each grape variety separately, ages them for nine months in steel tanks, cuvettes meticulously and starts secondary fermentation in the bottle by means of a sweet must made from the same grapes. Following the tradition of the area, he does not disgorge any of his sparkling wines. The Saldalama is precise, straightforward and purposeful. It moves across the palate without wavering, offering plenty of bright red fruit and a fine spiciness, it is elegant, crystal clear and lively. It has substance in a pleasantly restrained way and has an impressive and present effect far beyond the palate.
