Christiano Guttarolo started making wine with 2 HA of vines left from his grandfather. Today hè has 7 HA, and has converted the old masseria into a winery. This area is called the Murge Plateau- situated 360 meters above sea level and cooled by a strong breezes coming from the adriatic and lonian seas. Even in the hot summer sun, the grapes are kept cool and the fossilised limestone of the plateau, often visible through the topsoil, give Christiano’s wines a markedfor elegance. The wine has tasting notes of citrus, sea salt, wild flowers, minerals and a Little bit herbal.
François-Xavier Dauré, F.X. for short, earliest memories of working in family vineyards. Took over family domain in 2015 and started conversion to organic farming. Worked with Tom Lubbe at Matassa alongside farming own vines (16ha) for 5 vintages (lot of work!) 7-day whole bunch co-fermentation in large fiberglass tanks. Pressed, then juice transferred back to the fiberglass to complete fermentation. Wine goes through full malolactic fermentation.
Maria and Sepp Muster began their winery in 2000 on 10ha of family land that dates back to 1727. After gaining experience abroad, the couple embraced nature as ‘the greatest teacher’ and settled in south Styria near the Slovenian border. Today they farm 22ha. The soil gives the wines great minerality which is a signature of their wines. The vineyards host over 70 different plant species - a tribute to their biodynamic approach which cultivates biodiversity. Elegant wine. Mineral, fresh but complex, thirst- quenching, salty, great with our menu!
