Young estate established since 2014 in Beaujolais with 5.50 HA of vines labeled in Organic Agriculture including 1.20HA in the Morgon appellation and 4.30HA in the Régnié appellation. The vines are located within a perimeter of 3km around the estate in order to minimize our impact on the environment. Planting density: 10,000 plants /HA Straddle tillage, plant cover or inter-row grass strips. Handmade green work, weaving of young vines to preserve the Apex Manual harvest The wines are vinified only with the grapes of the exploitation (no trade status), in whole harvests, in indigenous yeasts and without inputs. Carbonic maceration between 7 to 12 days depending on the cuvées The aging is done between 50% to 100% in Burgundy barrels (barrels of 10 to 12 wines) and in Epoxy vats on fine lees for 8 to 12 months without sulphite. Wine unfiltered, unfined and slightly sulphited before bottling between 10 to 20mg/litre of total SO2 depending on the vintage. (total SO2 vintage 2020-2021: 1G/HL)

Vendanges manuelles

Les vins sont vinifiés uniquement avec les raisins de l’exploitation (pas de statut de Négoce), en vendanges entières, en levures indigènes et sans intrants.

Macération carbonique entre 7 à 12 jours selon les cuvées

L’élevage est fait entre 50% à 100% en fûts bourguignons (fûts de 10 à 12 vins) et en cuve Epoxy sur lies fines pendant 8 à 12 mois sans sulfite.

Vin non filtrés, non collés et légèrement sulfités avant mise en bouteille entre 10 à 20mg/litre de SO2 total selon le millésime. (SO2 total millésime 2020-2021 : 1G/HL)
