THE DOMAIN
No trading, no inputs or sulphites, just our beautiful grapes. We produce living wines without input, in an artisanal way. Our vines are located in Burgundy (south Yonne), Val de Loire (Sologne) and Muscadet (Pays de Retz). 13 grape varieties for 14 vintages: we seek diversity, freshness and balance. The vines Our 16 hectares of vines are cultivated without pesticides or chemical fertilizers. The vines are located in Burgundy to the south of the Yonne department, in the Loire Valley, in the Loir et Cher (at Soings in Sologne), and in the Pays de Retz (land of Muscadet at the is from Nantes).
In Burgundy... Our red wines are made from the Pinot noir grape variety. We also have freshly planted from Pineau d’Aunis. For white wines, our grape varieties consist of Chardonnay, Aligoté, Auxerrois, Savagnin, Sacy and a few Viognier vines.
In the Loire Valley... Cabernet Franc, Gamay, Côt and Pinot Noir are grown to produce red wines. Sauvignon blanc, Sauvignon Fié gray and Chardonnay in white. In Pays de Retz Mainly crazy white, Melon de Bourgogne and Grolleau gris Winemaking
WINEMAKING: RESPECT THE FRUIT AND IT WILL GIVE IT BACK TO YOU!
Hand harvesting in small boxes to avoid crushing, manual destemming, manual pressing with a grape press; century-old wooden ratchets... allow you to respect the fruit and obtain quality juice. which will then ferment thanks to native yeasts in their containers (oak barrels from several wines, wooden vats, resin vats and amphorae). They will only come out to be bottled. This last step is also manual.
AND THEN SULFITE?
Only the wicking of the barrels is practiced. if necessary, for their good conservation. So no contribution during vinification and beyond; bottling.
