Low yields coupled with multiple and varied grassy terroirs allow us to respect the harmony between all the forces of Life so dear to biodynamic principles, also applied on the estate.
The red winemaking, always in whole bunches and without temperature control, allows for slow natural fermentations and infusion to transmit the feeling over the seasons. For the whites, the same philosophy: gentle pressing, without settling, in tumultuous fermentation followed by aging on fine lees.
The whole challenge of the estate lies in letting the "memory of water" express itself... We believe that the pleasure of the senses and the drinkability of a wine are at the heart of hedonism to give free rein to the full expression of the mosaic of Lyon's terroirs.
