Chance sometimes does things well….when Brice Omont seeks to become a winemaker, with an inclination towards organic, biodynamic viticulture, things do not seem to be going well in advance. At that time, organic was still seen as a fad of certain originals in the region. Fortunately, good fairies point out to him the one who will give him the opportunity to make his wish come true: Michel Grisard. A pioneer of biodynamics in Savoie, he created the estate in 1998 on the Coteaux de Cevins. Brice knows, by tasting Michel's wines, that this is what he wants to aim for.
Without further ado, and thanks to the fact that he was not yet trained in conventional viticultural techniques, Michel Grisard gave him the opportunity to join the Domaine des Ardoisières (in 2003). Together, they continue to plant different plots with native grape varieties (Persian, Mondeuse Noire, Altesse, Roussanne, Mondeuse Blanche, Malvoisie and Jacquère, Altesse, etc.)
These plots are spread over the steep hillsides of Cevins (former slate quarries from which the estate takes its name, schist soil) and Saint Pierre de Soucy (shale marl). Recently, a few acres of old vines in Apremont have completed the picture. It is in this way, by working alongside him on a daily basis, that he trains, learns, and asserts his tastes and choices.
A true enthusiast and curious person, he learned not only how to prune the vine, to accompany it as best as possible without chemicals, but also to make wine with as little intervention as possible...besides a slight addition of sulfur during bottling. In 2009, Michel gradually handed over the reins to Brice, not without difficulty. Brice today makes wines that reflect his tastes, and the terroir on which the vines flourish. Always with humility and passion.
