It was truly upon my return to France in 2020, and more precisely in the Pyrénées-Orientales, that Bonyvresse was born, as a merchant-winemaker. Thanks to the technical and human support of Loïc Roure (Domaine du Possible 66) and the purchase of grapes from organic farming, I was able to embark on the adventure of natural wines.
The year 2023 marks the fourth year of production, with, for the second time, vinifications carried out in Alsace, and for the first time, total independence in terms of production location and equipment. Moving from a range of two wines, a red and a white in 2020, this independence in 2023 offered me the freedom to develop up to twelve original vintages. The majority of my range remains mainly from organic grapes harvested in Roussillon, with constant partnerships for the purchase of fresh, hand-picked grapes. Since 2022, the development of new local partnerships in Alsace and then in Germany, near the border with Mulhouse, have emerged.
In addition to my efforts as a merchant-winemaker, I also work in winemaking services that respect people in Alsace.
In this quest for independence, the objective of managing my own rental vines remains relevant, hoping to realize this project at the end of 2024... to be continued!
My wines are made from organic or biodynamic grapes, harvested by hand, with a minimal interventionist approach to winemaking. Spontaneous fermentations, no filtration or fining and an average total SO2 between 0 and 20 mg.
