Our winery is located in Oestrich-Winkel, in the middle of the Rheingau region. We work organically on 11 acres. All the work that can be done by hand is done so and the rest is done with a small tractor. Our grapes are of course hand picked and made as natural as possible in the cellar. Our fermentation starts with wild yeasts, and most of our wines get some time on the mash. During the fermentation we do no interventions. Some wines get a minor sulphur dosage right before bottling. We also integrated a yoga studio in our winery, to create a place to come down and unwind. The work is done by us, Cosi and Nik, we are a winemaker couple and we met during our oenologie studys. During harvest times we get help from family and friends and also people from programs like WOOF. We also try to reduce the usage of fungicides as much as possible, that's why we planted our new vineyards with fungus resistant grapes. We are currently in the certification process for organic farming, which will be completed next year.
