The surface cultivated with vines is approximately 7.5 ha, the soil is predominantly clayey and the rows are divided into a sinuous hilly surface 5km from the Ionian Sea and 10km from Aspromonte.
The cultivated varieties are Calabrese Nero, Greco Nero, Aglianico and Gaglioppo, black grapes; Greco Bianco and Falanghina are the white grapes.
In the vineyard, we fertilize with organic material (manure, compost, green manure, company residues), treat with copper/sulphur/sodium bicarbonate, and use essential oils (sweet oranges, neem).
The harvest is strictly manual, with careful selection of the grapes.
In the cellar, we only use grapes from our own production, which are destemmed and pressed within a few hours of harvesting; we let fermentation occur spontaneously thanks to the presence of indigenous yeasts.
We follow all the phases of winemaking, intervening where necessary with oxygenation (pumping over and punching down) and with temperature control, in order to allow the grapes to express themselves at their best and "supporting" the work of the indigenous yeasts.
We work exclusively with stainless steel tanks to guarantee the maximum expression of the grape variety and fruity notes. For refinement, we work with the fine lees, practising "sur lies" refinement.
Our goal is to enhance our land and its native varieties and produce an authentic, healthy and genuine wine that brings the true flavour of the grapes into the glass.
