The grapes come from the vine planted in 2005, on clayey calcareous soil and sandy limestone. All operations are done by hand until harvest in small cassettes during the early morning hours. In the cellar the grapes are destemmed and softly pressed, without sulphitesadded and following the rithm of spontaneous fermentation at controlled temperature. 6-7 months in steel and 2 months in bottle.
