Domaine des 3 Saules was born from the takeover of a 4.5ha vineyard, which was associated with the purchase of a 7.5ha property (including 0.5ha of vines), at the beginning of 2015. immediately began a conversion to organic farming across the entire vineyard. The grape varieties found there, representative of the region, are Merlot, Cabernet Sauvignon, Cabernet Franc in red, Sémillon and Sauvignon for whites. Soil maintenance work in and under the row, as well as treatments, are carried out mechanically, and tending to the vines (desuckering, disbudding, lifting, topping) is done manually. Mineral fertilizers have been replaced by green manures and intermittent amendments based on sheep/cattle manure. Since this year, I have been focusing more and more on permaculture and agroforestry practices, with the establishment of trees, shrubs and small creepers directly in the row, with natural mulch to demechanize certain plots. The work in the cellar is obviously little interventionist. I favor aromatically neutral containers (I almost entirely do without barrels). No fining and light racking before bottling. Adjustment in total SO2 around 15-20mg/L.
