In organic and biodynamic agriculture, viticulture consists of keeping the environment in balance, the vine being considered in the same way as its environment. Our tillage requires the roots to submerge, the natural yeasts permeate their environment all year round ... our way of working makes a huge mark on the identity of the terroir. In the cellar, the same philosophy guides us, the technology is minimal so that this strong identity is not erased by a few interventions. We do not use any oenological method or product that would have the effect of standardizing. The microclimate specific to the geographical location of our land gives our wines a balance and depth that is quite atypical for the region. The large number of vintages is due to the fact that each plot is vinified separately. It is for this reason, and for the sake of authenticity, that, as far as possible, each terroir is the subject of a cuvée. Red wine vinification: The manual harvest is vinified in the traditional way: for some of our cuvées pseudo-carbonic vinification at room temperature is carried out in whole bunches. Each plot is vinified in a separate vat. Once destemmed, the grapes are placed in a tank using an elevator belt in order to maintain the integrity of the berries. The vat is then hermetically sealed, the fermentation often starting after a few hours, always in indigenous yeasts and without suffering. Maceration lasts about a month. The devatting is dictated by the daily tasting. Aging takes place in vats or barrels for one to two years. Drawnings, protected from air, take place during the winter. The wine is bottled without fining or filtration, the only addition of sulfur is done at this time, at 2gr per hectolitre. White wine vinification: The harvest is manual and takes place very early in the morning so as to bring in the juice as cold as possible. The must is sulphited on the press at 3gr / hl. After pressing, the juice is collected in a tank saturated with carbon dioxide, barely settled so as not to strip it. If everything is going normally we do not paste or filter. Our equipment allows us to choose the day of bottling, bottling takes place in spring on a fruit or flower day, 2gr / hl of sulphite are added at this time to arrive at a total of less than 40 mg per liter

En agriculture biologique et biodynamique la viticulture consiste à maintenir le milieu en équilibre, la vigne étant considérée au même tire que son environnement.

Notre travail du sol oblige les racines à plonger, les levures naturelles s’imprègnent toute l’année de leur environnement… notre façon de travailler marque énormément l’identité du terroir.

A la cave, la même philosophie nous guide, la technologie est minimale de manière à ce que cette identité forte ne soit pas gommée par quelques interventions.
 
Nous n’utilisons aucune méthode ou produit œnologique qui aurait pour effet de standardiser.

Le microclimat propre à la situation géographique de nos terres confère à nos vins un équilibre et une profondeur assez atypique pour la région.

Le nombre important de cuvées est dû au fait que chaque parcelle est vinifiée séparément.

C’est pour cette raison, et dans un souci d’authenticité que, dans la mesure du possible, chaque terroir fait l’objet d’une cuvée.

Vinification des Rouges :

La récolte, manuelle, est vinifée de façon traditionnelle : pour certaines de nos cuvées la vinification pseudo-carbonique à température ambiante s’effectue en grappes entières.

Chaque parcelle est vinifiée dans une cuve à part.
Une fois éraflé, le raisin est mis en cuve à l’aide d’un tapis élévateur de manière à conserver l’intégrité des baies.

La cuve est ensuite fermée hermétiquement, la fermentation débutant souvent au bout de quelques heures, toujours en levures indigènes et sans souffre.

La macération dure un mois environ.

Le décuvage est dicté par la dégustation journalière.

L’élevage se fait en cuve ou en barrique pendant un à deux ans.

Des soutirages, à l’abri de l’air, ont lieu pendant l’hiver.

Le vin est embouteillé sans collage ni filtration, le seul ajout de soufre se fait à ce moment là, à 2gr par hectolitre.

Vinification des blancs :

La récolte est manuelle et a lieu très tôt le matin de manière à rentrer le jus le plus froid possible.

Le mout est sulfité sur le pressoir à 3gr/hl.

Après le pressurage le jus est recueilli dans une cuve saturée de gaz carbonique, à peine débourbé de façon à ne pas le dépouiller.

Si tout se déroule normalement nous ne collons ni ne filtrons.

Notre équipement nous permettant  de choisir le jour de la mise en bouteille, les embouteillages ont lieu au printemps un jour fruit ou fleur, 2gr/hl de sulfite sont ajoutés à ce moment là pour arriver à un total inférieur à 40 mg par litre
