After having done my wine classes for 5 vintages with Christophe Pueyo in Libourne, I moved to Lahonce, near Bayonne in July 2023 in a premises that I am gradually transforming into a winemaking cellar.
Access to land being very expensive in the Basque country and vines rare, I chose to start with a trading activity.
For my first vintage I collaborated with three certified organic winegrowers: Vincent l'Amouller from Chateau Fredignac, Simon Ribert from Strateus and Chante Alouette in Charente.
Following which I worked to vinify and mature their grapes in the gentlest possible way in my cellar in Lahonce.
The result is 3 2023 vintages: a natural white sparkling wine, a red wine and a dry white wine aged in 300l barrels.
