Sauta Roc was born in Vailhan. After traveling around the world, from Australia to Italy, Laura Borelli and Bertrand Quesne cast anchor as they approach its prominent rocks, the Causses, which emerge from the exuberant scrubland. Vailhan is at the end of the Terroir de PéZenas. She sits on a ground of shale, limestone and basalt. Suffice to say, here, Nature has had some ups and downs. From its bowels flows a river, the Peyne, which runs as far as Pézenas and flows into the Hérault. Sauta Roc was born from this rocky land. This is the origin of its name. It’s Occitan. And at the same time, when Laura says it, it sounds like a typical Italian name, like her. The isolated vines follow the alignment of the relief cut by erosion. They benefit from a preserved natural environment, a real diversity. The stone marks the landscape, influences the couple's work in the vineyard and is imprinted on the labels of the estate's bottles. Each cuvée is an original drawing by Laura who wanted to illustrate certain imposing reliefs that make her daily life. The couple are entering their fourth vintage in 2019. They have the confidence of the daring when they tell you about their projects, what still needs to be done to meet their expectations, and are happy to make wine in the AOC Languedoc Pézenas appellation.

Sauta Roc est né à Vailhan. Après un périple autour du monde, de l’Australie à l‘Italie, Laura Borelli et Bertrand Quesne ont jeté l’ancre à l’approche de ses roches proéminentes, les causses, qui émergent de la garrigue exubérante.

Vailhan est à l’extrémité du Terroir de PéZenas. Elle est assise sur un sol de schiste, de calcaire et de basalte. Autant dire, qu’ici, la Nature a eu quelques soubresauts. De ses entrailles coule une rivière, la Peyne, qui court jusqu’à Pézenas et se jette dans l’Hérault.
Sauta Roc est né de cette terre rocailleuse. C’est l’origine de son nom. C’est occitan. Et à la fois, quand Laura le prononce, on dirait un nom typiquement italien, comme elle.

Les vignes isolées suivent l’alignement du relief taillé par l’érosion. Elles profitent d’un environnement naturel préservé, d’une réelle mixité. La pierre marque le paysage, influence le travail du couple à la vigne et s’imprime sur les étiquettes des bouteilles du domaine. Chaque cuvée est un dessin originale de Laura qui a voulu illustrer certains reliefs imposants qui font de sa vie un quotidien.

Le couple entame en 2019 son quatrième millésime. Ils ont l’assurance des audacieux quand ils vous parlent de leurs projets, de ce qu’il reste encore à faire pour combler leurs espérances et sont heureux de faire du vin en appellation AOC Languedoc Pézenas.
