Small vineyard of 5 Ha in organic farming in the PDO Fronton (South-West), composed of indigenous and historical grape varieties such as Négrette, Duras and Prunelar (replanted by Marie) the Château des Peyraux is reborn from oblivion after more than 20 years of abandonment. The sizes used are the goblet (fan-shaped) and the simple guyots. The vines are mounted high enough, the trellising is done with a third wire and the vines are not trimmed. Great attention is given to the soil, to the natural rhythms, and the manual care of the vines is constant and meticulous, disbudding, suckering, de-leafing, etc., up to the harvest by hand. The young vines (4 ha) are picked (because the intercep is not enough), smoked and the inter-rows are sown with very diverse plant cover in order to improve the structure of the soil and make it fulfill its role of nutrient and water reservoir. , and to large and (very) small auxiliaries ... The treatments carried out are classic organic, but less and less marked by copper (today at less than 3 kg / ha / year) and the first biodynamic-type treatments are attempted (with my modest means ...) I make organic (little sulphite) and natural cuvées, leaving an increasing part to wines without added sulphites. I do not glue or filter the reds. The whites and rosés are glued with bentonite only. No chaptalization or addition of acidity.

Petite exploitation viticole de 5 Ha en Agriculture biologique dans l'AOP Fronton (Sud-Ouest), composées des cépages indigènes et historiques comme la Négrette, Duras et Prunelar (replanté par Marie) le Château des Peyraux renaît de l'oubli après plus de 20 ans d'abandon.

Les tailles pratiquées sont le gobelet (en éventail) et les guyots simples. Les vignes sont montées assez haut, le palissage se réalise avec un troisième fil et les vignes ne sont pas rognées. Une grande attention est donnée au sol, aux rythmes naturels, et les soins manuels sur les vignes est constant et minutieux, ébourgeonnage , épamprage, éffeuillage etc, jusqu'aux vendanges à la main. Les jeunes vignes ( 4 ha) sont piochées (car l'intercep ne suffit pas), fumées et les interrangs sont semés de couvert végétal très diversifié afin d'améliorer la structure du sol et lui faire tenir son rôle de réservoir à nutriment et eau, et à auxilliaires grands et (très) petits...

Les traitements réalisés sont classiques en bio, mais de moins en moins marqués par le cuivre, ( aujourd'hui à moins de 3 kg/ha/an) et des premiers traitements de type biodynamie sont tentés ( avec mes moyens modestes...)

Je réalise des cuvées bio (peu sulfitées) et natures, laissant une part croissante aux vins sans sulfites ajoutés. je ne colle ni ne filtre les rouges. Les blancs et rosés sont collés à la bentonite seulement. Pas de chaptalisation ni d'ajout d'acidité.
