The loam soil with lots of chalk is the perfect terroir for the cépages in this cool climate region like chardonnay, pinot gris, pinot noir, chenin blanc, aligoté and sauvignon blanc.
Patrick Carmans is crafting the wines in the most authentic way possible, lots of manual labour and fully dedicated to bio-culture. All wines contain no to very limited added sulphites, always far less than 40mg/l and only upon bottling.
We are fully dedicated to natural wine making in the cellar, working 100% with indigenous yeast and natural fermentation, zero intervention and very limited sulfitage.
In the vineyards itself we work with tisanes to fortify the plants, we don't use any chemicals, neither do we use copper.
We manually work the vineyards and ensure good canopy management to ensure good air flows and to avoid humidity we manually take away leaves in the fruit zones.
We work in the philosophy of permaculture and do not work the land as such.
