This family-sized house (15 ha) located in the south of Burgundy, close to Chaintré The border of Mâconnais and Beaujolais is today managed by the two sons of Gérard Valette: Philippe and Baptiste.
The exclusive grape variety is Chardonnay, worked in a unique way. without synthetic chemicals since 1992. The main characteristic of our field lies in the respect and attention we pay to our soils and our vines, throughout the season. In order to obtain Terroir wines, that is to say, which reflect the identity of the winery. from the place of production, we work intensively on the microbial life of the soil, so that the vine feels in its element; For this, we practice soil aeration by plowing or grassing depending on the geographical and geological configuration of the plot, and the climatic conditions of the year. From these vines, well anchored in their terroir, we obtain balanced grapes which we leave on the vine until they mature. obtaining a maturity phenolic, followed only by tastings of grapes on the vine. As soon as this maturity is achieved, the harvest kicks off.
Picked from By hand, in a small 15 kilo crate, the grapes do not undergo any mechanical operation before being placed in the basket. in the pneumatic press. Once pressed, the juices flow directly by gravity. in a tank, without the addition of sulfur or any other input. Roughly settled, they are then put into barrels with the lees in our cool cellars, in order to be aged for a year. Before the next harvest, they are racked and then massed for aging for a minimum of one year until they reach their final harvest. twelve years for certain vintages. It is only at the end of this aging time that our wines are bottled without fining or filtration.
