The Domaine des Canailles is located in à Ternand in the south of Beaujolais, in the "Pierres Dorées" sector at just 30 km northwest of Lyon. The 8 hectares of vines have been cultivated organically since 2005 and biodynamically since the vines were taken over in 2019 by Simon Pérot. They are all found on granite soils between 450 and 550 meters above sea level.

In 2019, Simon took over the vines from Jean-Jacques Paire. The vinifications are done with respect for the grapes: native yeasts, no filtration or fining. Only a tiny amount Sulfur is added if necessary. Etienne Ubaud continued with an additional mention of work-study sommelier at the restaurant "Le Nez Rouge" in Paris. Toulouse.
