The Domaine is located in the south of France, in the Languedoc, in Ferrals les Corbières, on the Boutenac terroir. It is a terroir made up of wide strips of land rich in clay and silty particles and rolled pebbles. Perfect for deep rooting. The old vines that we have express themselves very well on this terroir. It was designed by the Ledogar family and is currently managed by the 3 brothers Mathieu, Benoît and Xavier. For generations, this family worked the vines but it was Xavier and his father André who bought a cellar in 1998, the year of their first vinification. The vineyard now covers 21 hectares and has been organic since 2006 (ecocert control), and biodynamic (Biodyvin 2020). 90% of the plots are located in the Corbières and Cru Boutenac appellation area. Since 2004, the vines have been worked in a natural way: Treatments based on herbal teas, compost juice, mineral sulphur, clays and rock powder, application of bio-dynamic preparations, superficial tillage, grassing of cereals and legumes in the fall, which will be “rolled” or buried superficially before summer in order to create a mulch, a mulch, protecting erosion and solar impact and thereby increasing the life of the soil so dear to the notion of Terroir... A special feature: Two-thirds of the property is made up of Carignans, Cinsaults and Grenaches aged between 70 and 130 years. The harvest is manual, with sorting of grapes on stumps and transport in crates or small skips so as not to alter the berries. The vinification is traditional, often scratched, depending on the vintage. We practice a few small pumping overs and we let the fermentation take place by controlling the temperatures (indigenous yeasts). No adjuvant is added except a little sulphites on certain Cuvées at bottling.
