I have 3 hectares in Gussago of Chardonnay and Pinot Noir.
The soil is limestone and clay of marine origin from the Jurassic period. Vineyards are 400 metres above sea level.
My average production is 7000 bottles per year.
Viticulture is organic. In the vineyard I do 4/5 organic intervention per year, with copper, sulfur and Cuban zeolithe.
I cut the grass before the harvest which is made by hand. I press the grapes with an old wooden pressoir and use old barriques and cement tanks for fermentation and refinement.
I work in oxidation so not all the barriques are completely full. I do not add sulphites, do not filter or clarify the wine.
