The vineyard is made up of eight plots, mainly south-east facing, all located in Ayent on 1.3 hectares with the following grape varieties: Chasselas, Arvine, Chardonnay, Amigne, Savagnin, Pinot Noir, Diolinoir, Syrah and Gamay among 600 and 850m altitude. The soils are composed of shale, more or less degraded and can have a percentage of deep clay (combs) or a more stony structure with quartz encrustation (ridges).
Viticulture is organic, the soils are grassed spontaneously or induced (mainly lupulin clover).
Fertilizer and irrigation are prohibited.
Fungal control during the vegetative period is carried out under the action of wettable sulfur and copper dioxide, plant herbal teas complement these products for their various virtues (wormwood, nettle, yarrow, dandelion, horsetail and also whey (from goat please!). The very decisive movements of the moon are observed precisely at these times.
The Valais climate with its high brightness and low precipitation makes it possible to drastically limit the volume of copper against mildew (> 1kg/ha per year). All work in the vines is carried out manually, topography requires, the inclination of the slopes can reach 38%!
In addition to a few flagship vintages which stand out in each vintage, new products may emerge depending on the specificity of the harvest.
