I have several inspiring encounters, Catherine Bernard in 2018 and that of Noëlla Morantin in 2019 who “triggered” this new path. I set out for a professional baccalaureate in viticulture and winemaking and did my classes at Jean-Marc Tard in Vendée (Domaine des Jumeaux, SAINS wines), helping out with a few friends in Anjou, and a decisive stint at Charles Bonnafont (estate des V Peyres) in the Tarn.
I am leaving La Rochelle with the whole family and returning to the south-west in 2022, where I am taking over 3.64 ha of white vines on the slopes of Gaillac only, to pamper the endemic grape varieties of Loin de l'Oeil and Mauzac.
My approach to life is not very original, just trying to take care of the Earth and its life as a whole, in the grand whole. So in organic yes, because it has to be qualified but it's more about prevention, treating the plant with plants and following the principles of the Cosmos to listen to the living thanks to biodynamics.
In the cellar, respect the quality and freshness of the picked grapes then take care of them using my manual vertical press to try to respect the fruit and the quality of the juice and press. Manufacture of a manual wooden destemmer, used for macerations, again to take care of the grape berries. No input except a little sulfur according to needs, native yeasts and elbow grease especially during crushing, re-breading and 6 hours of draining!
My goal is to make wines that are as healthy as possible and that the customer enjoys drinking them as I do!
So why Perles de Lune? Because the grape is precious like a pearl that must be watched over and taken care of. Moon because it is the rhythm, the movement, the cycle, the eight of infinity which governs nature and much more.
