Terroir and vine management

Winemaking

Out of deep convictions, and out of respect for nature and the consumer, winemaking is carried out without oenological artifice, following a natural process, using native yeasts. The harvest is done manually to sort and keep only healthy and ripe grapes. Only very low doses of sulphites can be used, particularly during bottling, but not systematically. The aging is carried out in oak barrels on the vast majority of vintages, allowing the wine to refine and decant naturally. The wine therefore aims to reflect the terroir and the vintage, all with deep respect for the environment and the consumer.
