The small wine-growing community of Wintersheim is located in the rolling hills of Rheinhessen. Here we, Bastian and Gianna, have been making our own wines since 2019. Wine the way we like it: natural, original, calm. BIODYNAMIC Farming is a generational contract. We took over the business from our family and would like to preserve it for future generations. Therefore we work according to biological and biodynamic guidelines. We are supported by our four-legged friends. FROM FREEDOM Our luck: as a blank slate, we can completely rethink our young wine project. We value this freedom because it gives us the privilege of impartiality. We find inspiration in the exchange with colleagues, the experiences in other wineries and through working in nature. LIVING FLOORS One thing we quickly understood: Great wines are made in the vineyard. Therefore, the conversion to organic viticulture was the basic requirement for taking over the parental winery. For some time we have also been working with biodynamic preparations and ferments. From 2023 our wines will be certified organic and biodynamic. BIODIVERSITY In the vineyard we attach great importance to a balance between people, nature and animals. We are trying to strengthen this balance with species-rich greening, humus growth and Breton dwarf sheep. Our goal: as lively soils and vital vines as possible. HEALTHY GRAPES Healthy grapes, hand picking and careful processing are the prerequisites for our wines. We rely on traditional methods and craftsmanship instead of superfluous technology. HAPPY YEASTS After pressing, the yeasts take over. Our credo: Consistent minimalism, peace and time. Specifically, this means working with as few additives as possible. Our wines remain on the yeast for almost a year and are bottled unfiltered using only gravity.
