The Domaine du Temps is a wine estate located in the south of France on the border of the Montagne Noire and the city of Carcassonne at a place called "Font Juvénal". Anchored in the heart of a Cabardès valley, the 13 hectares of vines (and as many different grape varieties) have been grown organically for around twenty years. The terraced plots on a clay-limestone soil are bordered by 60 hectares of scrubland and woods. In the vineyard, the grassing of the row is permanent in order to maintain biodiversity. The maintenance of the vines is done mechanically but also with the help of our animals (horses, donkeys, pigs, goats and chickens). We favor prophylaxis and treatments based on infusions and decoctions of plants. The harvest is carried out by hand in small boxes of 15 kg. This allows us to keep grapes intact in whole bunches. In the cellar, a former 18th century priory, the wines are made without “chemistry” but with a lot of love! All our wines undergo natural fermentation (alcoholic and malolactic). Our wines are without added sulfites and certified "Organic" by ecocert.
