The winery is located in Argelès-sur-mer while the vines are spread across the 4 communes of the Collioure appellation: Port-Vendres, Collioure, Banyuls and Cerbère. They represent an area of 5ha50 and are divided into 7 distinct plots, thus offering varied exposures. Sometimes very close to the sea - 50m from the water - and sometimes a little higher up at just over 200m above sea level, but still offering a view of the sea.
In the vineyard, the vast majority of work is done by hand. The work of the soil must be adapted to each plot, only 20% of the surface can benefit from a track or horse passage. The other narrower plots must be worked by hand using a brush cutter or the “Xadic”, a pickaxe typical of the Collioure/Banyuls region.
The organic treatments are based on copper, sulfur, essential oil, manure or even plant decoctions and are only done with a backpack atomizer. The harvest is carried out by a team of 6-8 people, nicknamed the “colla” in Catalan. The grapes are transported in 30 liter boxes.
The work in the vines is designed specifically for each plot in view of the particularity of each terroir, its location, its elevation, the nature of its soil (shale or clay), as well as the planting density.
In the cellar, no fermentation yeast is used, rigorous hygiene and analytical monitoring allow for clean and complete fermentations. No sulphite is added during vatting of the grapes or bottling.
Vinification and aging take place in stainless steel or fiber vats, sometimes in old barrels depending on the vintage.
