Coming from a family of winegrowers and market gardeners, Stephan BUFFILLE set up as a market gardener/arboriculturist in 2000 and then created the Domaine de l'Anchois in 2015. Passionate about the environment, his goal is to "make an original wine that corresponds to the terroir by cultivating the vines as naturally as possible". Wishing to leave the standards, he carefully chooses his grape varieties, and creates his own cellar in order to produce free and qualitative wines, in the respect for the earth and the living. The estate now extends over 7.5 hectares of vines and 5 hectares of olive trees, on the edge of the Bolmon pond, benefiting from sea spray and sandy clay soil. The vineyard is only made up of old grape varieties known for their aromatic power and natural resistance to disease. Œillade Musquée, Savagnin, Muscat Romain, Plan des Cévennes, Sciacarello, Albert Seibel and Sauvignon. Stephan BUFFILLE made the choice of a biodynamic culture even before the creation of the estate. Above all, he wants a respectful and meaningful practice, considering the environment as a whole. The soil is left grassed all year round and amended with various natural composts, thus increasing animal and plant biodiversity and therefore its fertility. Added to this are natural preparations that accompany the development of the plant, making it gain in vitality and expression of its terroir. Using the force of life rewards us with quality harvests. The harvest is done manually, thus preserving the quality of the grapes right up to the cellar. The wines are vinified in the estate's cellar using different methods. In his quest for quality, Stephan BUFFILLE collaborates with a consultant oenologist.

Issu d’une famille de vignerons et maraichers, Stephan BUFFILLE s'installe comme maraîcher/arboriculteur en 2000 puis il crée le Domaine de l’Anchois en 2015.
Passionné par le milieu, il a pour objectif de « faire un vin original qui corresponde au terroir en cultivant les vignes le plus naturellement possible».
Souhaitant sortir des standards, il choisit minutieusement ses cépages, et crée son propre chai afin d’élaborer des vins libres et qualitatifs, dans le
respect de la terre et du vivant.
Le domaine s’étend aujourd’hui sur 7,5 hectares de vigne et 5 hectares d'olivier, au bord de l’étang de Bolmon, bénéficiant des embruns marins, et d’un sol argilo sableux.

Le vignoble est uniquement constitué de cépages anciens connus pour leur puissance aromatique et une résistance naturelle aux maladies.

Stephan BUFFILLE fait le choix d’une culture en biodynamie avant même la création du domaine.
Il souhaite avant tout une pratique respectueuse et porteuse de sens, en considérant l’environnement dans son ensemble.
Le sol est laissé enherbé toute l’année et amendé par le biais de différents composts naturels, augmentant ainsi la biodiversité animale et végétale et donc sa fertilité. A cela s’ajoute des préparations naturelles qui accompagnent le développement de la plante, lui font gagner en vitalité et en expression de son terroir. Utiliser la force du vivant nous récompense par des récoltes de qualité.

Les vendanges se font manuellement, préservant ainsi la qualité des raisins jusqu’au chai. Les vins sont vinifiés au sein du chai du domaine selon différentes méthodes.
Dans sa recherche de qualité, Stephan BUFFILLE collabore avec une œnologue conseil.
