The three-hectare vineyard is located all around the town of Montouliers on its south / south east / north east slopes and on the plateau of Cazelles / Saint Jean de Minervois. The slopes are those of the first hills of Haut Languedoc and open the Minervois overlooking the Narbonnaise plain. The soils are made of clay reddened by oxidized iron salts left by ancient seas, limestone and sandstone, quartz and chalk. Our majority grape variety is Mourvèdre, it is planted on limestone and quartz sandstone to the west of the village. We also have an old black Carignan planted with Terret Blanc and Grenaches towards the south. We vinify in the town of Agel, in the back valley, in our cellar at 5 rue des remparts. All fermentations start locally with the yeasts of our grapes but also of our cellar and our village. We don't slurry, filter or add sulfites if it's not necessary. Everything is done by hand from the harvest to the labeling. Our Domaine is not certified organic or biodynamic but our way of working is no different. We carry out a so-called “soft” pruning following and building the sap paths of the vines. Our soils are worked by ewes grazing from December to the end of March, no plowing, treatment with small doses of copper and wettable sulphur, herbal teas and whey. We obviously harvest everything by hand, tread with our feet, drink with our hearts!
