Respect for tradition, living in generations, and belief in the future of our beautiful planet are values
that influence our daily lives. We grow our vines and other crops organically, without the use of
herbicides, pesticides and systemic chemical products. We believe that the grapes themselves give of
their best, and merely provide time and space so that the wines can fully express their varietal and
vintage characteristics and the unique terroir of Wolf and Rose valleys. We strive for balance,
harmony and authenticity, which can be discovered also in our wines.
We produce wine exclusively from our own organically grown vineyards. Organic viticulture uses
alternative eco – preparations that strengthen the immune system and natural defenses of the
plants. To fight of the pests bio – agents are used such as settlement of predatory mites in the
vineyards. The use of herbicides is also excluded, even if it puts increased demands on the
mechanical working of soil in the strips under the vines, which however, thanks to that grow in
“living soil” rich in diverse soil organisms.
In the cellar, our paradigm is don’t intervene, while doing it all right. Our goal is to produce authentic
vin au naturel, faithfully reflecting the varietal characteristics of grapes, the unique terroir of Sucha,
as well as the vintage specifics. We believe that the grapes grown by organic farming do naturally
contain a balanced mixture of all substances necessary for the creation of full-bodied and
harmonious wines full of live, of course free of chemical residues. Therefore, we do not make use of
the commercially available preparations such as enzymes, culture media, bacteria and tannins, nor
do we chemically alter the natural composition of must or wine. Since the 2014 vintage are all our
wines created exclusively by natural fermentation based on indigenous yeasts.
We are adding only minimum or even none of sulfur dioxide to the wine, however, ensuring that at
the time of bottling the free sulfide content is around 10 mg / l, what should be enough to protect
the wine in the bottle. Therefore, the total sulfide content in our wines is well below the EU/SK limit
values: 200 mg/l for white wine and 150 mg/l for red vine or 150 mg/l for white bio-wine and 100
mg/l for red bio-wine.
In the spirit of authenticity, we refrain also from filtering and fining of the wine. The red wines are
perfectly cleared during the usual 24 months of barrel aging. Rose, orange and white wines, which
mature for a shorter period, usually clear spontaneously as well, however, lack the sparkling clarity of
filtered wines and may contain a light deposit consisting of proteins and yeast residues, the so called
“mother”. This deposit has however high nutrition value, since it contains active vitamins, enzymes
and probiotics.
Since 2015 we are certified organic wine producers and since 2017 our vineyards are in conversion to
biodynamic farming. In 2019 we became members of the natural wine movement Autentista
Slovakia (www.autentista.sk).
