Natural wine and cheese: 3 pairings to try!
Let yourself be tempted by three natural wine & cheese pairings, suggested by Didier from La Source Fromagerie Cave!
Last February, Didier Grosjean and his wife Chloé Salgado opened La Source Fromagerie Cave in Paris. In their shop, 90% of their products are made from farmhouse raw milk, with a small range of pasteurised cheeses for pregnant women and children under 5. On the other side is a fine collection of carefully selected natural and biodynamic wines. For Raisin, Didier has come up with three cheese and wine pairings that showcase the work of the producers!
Bivouac x Persillé des Aravis
Didier takes us to Savoie for this first pairing! We find Jeremy Bricka's Bivouac cuvée, a blend of Muscat, Clairette and Jacquère. According to Didier, this dry white wine goes perfectly with Persillé des Aravis, a goat's cheese from the same region. Persillé des Aravis, of which there are only around thirty producers left in France, becomes bluer with age, and therefore more powerful too. The minerality of the wine reveals the power of Persillé des Aravis, a real treat for the taste buds!
Trinques-y x Mont d’Or
For the second pairing, Didier offers us Mont d'Or, a cheese that needs no introduction! Mont d'Or, a very creamy, melt-in-the-mouth cheese, goes very well with Domaine de Savouëtaz's Trinques-y cuvée. This is Pierre Grobon's first vintage, a blend of Mondeuse and Gamay. This young, light but delicious red does not alter the flavours of the Mont d'Or. Just as the Mont d'Or, which is fairly mild, preserves the aromas of Trinques-Y.
Antilope (alcohol-free) x goat cheese with flowers
Antilope is a Romain Des Grottes cuvée, a sparkling maceration of grape juice and plants. Didier chose to pair it with a tome of goat's cheese with flowers. The plants are added at the beginning of the maturing process, when the tome is still fresh, to maximise the infusion of the flowers into the tome. The Elderflower found in Antilope enhances the many floral notes of the goat's cheese tome. This combination of alcohol-free wine and pasteurised milk cheese is a perfect combo for pregnant women!
