Oct 2022It seems that for the Salvaneschi family it wasn’t enough to produce amazing natural wines as the third generation running Cascina Gasparda (try their Vecchie Radici – Grignolino!), now Mauro had to take over this wine bar in the beautiful hilltop town of Olivola and make it even better! I was there recently, I had friculín (traditional local fried veggieballs) and a fantastic tripe soup form a local butcher, accompanied by an Ottotori from Forti del Vento, finished with a finger-licking pear and ricotta cake and a bottle of Gargànte from Nevio Scala. Mauro is a great host, passionate about his work and wines. I can’t wait to see what he’ll make of the place!
